Old Fashioned Apple Pie for Mother's Day + Anniversary

My parents were in town to celebrate both Mother's day and a MAJOR milestone in their lives.  It was their 40th (FORTY YEARS!!!!) Wedding anniversary...

WELL, MY goodness, they deserve a pie... or a steak... or a lovely week with their children and grandchild.  Well, guess what folks?  They got ALL of that.  Because they are awesome!  Here's mama and papa, telling us their LOVE STORY.  We came up with a great idea to ask them all kinds of questions about their relationship and life together... bridal shower style.  That meant lots of emotion... laughter and tears all night. 



And now, let's get down to that business of the PIE.  PIEPIEPIE...  Remember me talking about my family + apple pie?  Yes, so this week, I decided not to shake the tradition.  I didn't wanna rock anyone's world with a pie too different from what we grew up with... so I decided to make a traditional (but gluten free) apple pie for our occasion.

Final Product!  A crisp, glazed crust... definitely looks home-made.  I've gotta work on the forming of the edges!

Old-Fashioned Apple Pie

Ingredients

Crust
Filling
  • 1/2 c unsalted butter
  • 3 tbsp gluten-free all-purpose flour (I use Bob's Red Mill Gluten-Free All-Purpose Flour)
  • 1/2 c white sugar
  • 1/2 c packed brown sugar
  • 1/4 c water
  • 1/2 tsp Vanilla Extract
  • 1/2 tsp Cinnamon
  • dash of Nutmeg
  • 8 Granny Smith apples - peeled, cored and sliced
Glaze
  • lightly beaten egg + 3 tbsp sugar

Directions

  1. Core, peel and slice apples into 1/4- 1/3" slices
  2. Pre-heat oven to 425 degrees F.
  3. Roll cooled pie crusts into 2 rounds, with about 10" diameters, and put aside.
  4. Melt butter in a sauce pan.  Then, stir in flour to form a paste. Add white sugar, brown sugar, cinnamon, nutmeg, vanilla extract and water and bring to a boil. Reduce temperature, and simmer 5 minutes.
  5. Meanwhile, place the bottom crust in your pan. Fill with apples, mounded slightly. Gently pour the sugar and butter liquid over the apple slices. Cover with the top crust. Pour slowly so that it does not run off.
  6. Bake 15 minutes at 425 degrees F (220 degrees C).  Remove from oven, and with a pastry brush, brush on the glaze mixture.
  7. Return the pie to the oven, and reduce the temperature to 350 degrees F (175 degrees C), and continue baking for 35 to 45 minutes. 
  8. Cool on a rack, and serve alone or ala mode with Vanilla bean ice cream!
 This pie was SO quick, easy and delicious.  I recommend it for any occasion!

  5. Oh wow! Congratulations to your mom and dad on their 40th anniversary! They look so happy in that picture. It's beautiful! Sounds like you all had a blast. I wish I could have a piece of that pie right now...drooling...
