Rosh Hashanah- Potato Latkes + Apples + Honey= Gluten Free Goodies!

Although I don't celebrate the Jewish high holidays myself, I certainly do appreciate some of the foods that go along with them.  I personally find that I can create any occasion to eat potato latkes.  Also, they go fantastically well with the traditional apples and honey, that are symbolic of the Jewish new year.

Here's a great, simple recipe for potato latkes, as we made them last year for a little holiday party with the girls.:

Asian Breakfast- Egg & Veggie Stirfry over Rice

The other day, we rummaged through the fridge and decided to make a nice veggie scramble... and attempt to use the rest of the veggies in the fridge.  We almost succeeded!  Still have some tomatoes in the crisper.  But, we managed to stirfry up a nice and simple veggie dish with- cabbage, carrots, chinese broccoli and sprouts.  YUM.

AND then, there was so much leftover, that the dish made a lovely transformation into our Saturday breakfast dish!
